Pretend like it’s Summer all year long with these easy to make creamy piña colada popsicles made with just 5 ingredients!

If this song didn’t come to mind when you read the title of this recipe, then we can’t be friends. Aside from being a fun song, piña coladas are made of the very best ingredients – coconut, pineapple, and rum.
I mean, what’s not to like?
So, in the spirit of piña coladas and hot summer days, I made us these popsicles inspired by the very creamy, delicious drink!
The hardest part of this recipe will be waiting for them to freeze.
But I guess you can have a real piña colada while you wait. ;)
How To Make Pina Colada Popsicles
- Soak the pineapple in coconut rum. In a bowl, add pineapple and top with coconut rum. Let sit for 5-10 minutes.
- Blend the rest of the ingredients. Meanwhile, blend coconut cream and sugar until well combined. Add pineapple with coconut rum and coconut flakes to a blender. Pulse just a tad as you want pieces of rum-infused pineapple in the popsicles.
- Make + freeze the popsicles! Add the mixture to a popsicle mold and add popsicle sticks. Freeze for about 4 hours or up to overnight. Serve immediately after thawing mold at room temperature.

This mold will make 10 popsicles and is perfect for juice, yogurt, or a boozy treat!

Ingredients

- 2 tablespoons granulated sugar
- 1 tablespoon coconut flakes

I am SO making this in the summer. I LOVE pina coladas and every time I have one it takes me back to my hot weathered trips to Cuba! I also had no idea colada meant one of those coffee sharing cups! That is so cool! I always thought it meant something along the lines of rummy coconut!

These look like Summer on a stick and probably taste like it too! If only I lived close enough to the beach where I could have one on the sand. I’ve seen coconut milk in the store, but I don’t think I’ve seen coconut cream – think I can use the milk as an alternative if it’s not there?

I had a really hard time finding coconut cream too but I found it near the alcohol section in with the drink mixers to make margaritas and things.
