Once again, Trader Joe’s saves the day with this very simple meal.
This Black Bean Rotini is not like traditional pasta. It’s a pasta that’s made of and tastes like black beans!
There are no grains which means it’s a good source of protein and fiber. You can definitely make this with a marinara sauce as you would with traditional pasta however, I decided to make it with avocado crema and top it with feta cheese.
The combination was DELICIOUS.
You can make the avocado crema using this food processor. Imagine the taste of black beans with chopped avocado and feta cheese crumbles. Delicious! Best part is that it’s ready in just 15 minutes!

How To Make Black Bean Rotini with Avocado Crema
- Make the avocado crema. In a food processor, combine the avocado, sour cream, lime juice, garlic, parsley, and salt, and pulse until smooth. The consistency should be similar to sour cream – thick yet spreadable. To thin it, add a tablespoon or two of water and pulse to incorporate. Set aside.
- Make black bean rotini pasta according to the instructions.
- Serve about 3/4 cup of the black bean rotini with 1-2 tablespoons of avocado crema. Top with feta cheese crumbles.

Ingredients
- 1 bag Trader Joe’s Organic Black Bean Rotini
- feta cheese for garnish
Avocado Crema*
- 1 avocado peeled and pitted
- 3 tablespoons sour cream
- 1 tablespoon fresh lime juice
- 2 cloves garlic
- 2 tablespoons fresh flat-leaf parsley chopped
- Salt to taste

Turned out well! I took hints from the above comment, and only did 1 1/2 Tablespoons lime juice, and loosely packed the parsley. I thought the mixture was way too thick, so I added milk to thin it out to the desired consistency, and added a little more salt to balance that out. The black bean rotini was surprisingly more like pasta (texture wise) than I expected it to be, too!
My husband didn’t like it much (but ate it anyways). But this tastes a bit similar to the Creamy Avocado Pasta on Oh She Glows- which I love, but he never liked. So I think it’s more of figuring out if you’re the kind of person who likes avocado on pasta or not. I will just have to make this for me from time to time :)

Well, this recipe was… Interesting. I added basil and spinach because I found the parsley a bit overpowering, and the lime juice was reeeally strong. I did add a few drizzles of olive oil which helped cut down on the acidity. Overall I would say that I kind of enjoyed it but probably wouldn’t make it again. It was easy to make though! Thanks for giving me something new to try. :)
