As much as I LOVE Chinese food, it’s not something that I eat all the time. It actually makes me feel like *poop emoji* so I just save it for special occasions.
But when that craving hits, I can at least make something that’s better for you and tastes just like it – kimchi cauliflower fried rice!
Doesn’t cauliflower rice taste bad?
I get this question a lot and my answer is always yes, yes it does. That’s why it’s soo important to season your food! Like everything else, if you don’t add spices, herbs, sauces to your meals, especially to veggies, it’s gonna taste like crap. Plain and simple.
If you see my other recipes with riced cauliflower, you’ll notice they are always seasoned. It’s crucial! Tasteless healthy meals are definitely NOT my cup of tea. Here are my other riced cauliflower recipes:

P.S. You can use leftover rice for this recipe instead without a problem. The real star here is the kimchi!
Ok, but why kimchi?
In case you haven’t noticed, I’m having a moment with kimchi. I’ve eaten them straight from the jar as a snack.
Kimchi is deliciously spicy and actually very good for you. It aids in digestion, is loaded with vitamins, and boosts your immune system. So bring on the kimchi!
Just 15-minutes!
Yep, you heard right. This kimchi cauliflower fried rice is ready in just 15-minutes. It’s the perfect healthy, middle of the week meal!
All you need to do is sauté the garlic, cook peas, carrots, kimchi, chili paste, and soy sauce for a bit before adding the riced cauliflower then scramble the eggs all in one pan. That’s it!

15-Minute Kimchi Cauliflower Fried Rice
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 cup kimchi
- 1/2 cup carrots shredded or chopped
- 1/2 cup frozen peas
- 2 tablespoons Korean chili paste omit if you don’t like spicy
- 2 tablespoons coconut aminos or low-sodium soy sauce
- 2-3 cups riced cauliflower or any leftover rice
- 3 eggs beaten
- salt + pepper to taste
- sliced green onions and sesame seeds for garnish
Instructions
- In a skillet, add oil and garlic. Sauté for 2 minutes over medium-high heat. Add kimchi, carrots, peas, chili paste and coconut aminos/soy sauce. Mix together and cook for another 2-3 minutes.
- Add riced cauliflower and cook for 1 minute. Push mixture to the sides of the skillet, leaving a hole in the center. Add whisked egg to center of pan and cook for 1-2 minute.
- Using a spatula, stir the egg to scramble then mix with the rest of the rice mixture. Season with salt and pepper to taste. Serve with green onions and sesame seeds as garnish. Enjoy!

This was delicious! I had leftover brown rice, so I used that instead of cauliflower rice. Also had no carrots, so did shredded red cabbage. Turned out excellent, and so easy! Love how versatile it is. Thanks!
