As you know, I absolutely LOVE to travel. Road trips, plane rides, whatever, let’s just go! During the Summer months, there’s nothing better than to travel down to the Keys. If you live in South Florida like I do, you’re pretty much guaranteed to take road trips to either Disney or Key West all Summer long, which means you’ll be in a car for hours so you better pack snacks!

What better snack for a Florida road trip than one with an iconic symbol of my home state! In case you didn’t know, we take our key lime pie pretty serious around here. When I was a kid, key lime pie was officially recognized by the state as an important symbol of Florida. Not to mention, it’s on basically every menu here. So guess what’s on my snack menu for my next road trip – No Bake Key Lime Pie Energy Bites!
You only need 5 ingredients – dates, almonds, key lime juice (!!), sea salt, and Bob’s Red Mills Vanilla Nutritional Boosters which is a plant-based protein powder, that’s sweetened with Monk fruit, and has tons of protein (20g per serving!), probiotics and fiber.
It doesn’t get any better than that!
Also, let’s talk key lime juice. You MUST find key lime juice. If you can’t, for some reason, find key lime juice or key limes, you can use regular limes. BUT…TRUST ME…that extra touch of key lime juice gives these energy bites such amazing flavor!

Keep your snack goals happy this Summer with these No Bake 5-ingredient Key Lime Pie Energy Bites!
- 15 Medjool dates , pitted and soaked in water for about 10 minutes
- 1/2 cup raw almonds
- 1 scoop Bob’s Red Mill Vanilla Nutritional Booster
- 3-4 tablespoons key lime juice (or 1-2 tablespoons regular lime juice (depending on desired strength of lime flavor)
- 1/2 teaspoon sea salt
Combine all the ingredients in a food processor and pulse until a dough-like mixture forms. Form into twelve 1-inch bites by hand.
