Boozy Mac N Cheese! Beer and applewood smoked bacon infused cheese sauce mixed with elbow noodles and topped with panko crumbs then baked to cheesy, crispy perfection! If that’s not the best party food combo, I don’t know what is.
While this is probably a man’s dream dinner, my girl friends enjoyed it during our girl’s night out! It seems like the last two months have been non-stop. Not that I’m complaining. I love parties!
Starting with all the July birthdays (I have a lot of Cancers in my life. Are you into astrology as much as I am?! I’m a Cap. Like Jesus. Nice to meet you!) and ending with a wedding pool party. A what?! Yep. The wedding was a backyard affair and, we ended the very hot, humid day/night in the pool. The best!
In a past life, I’m pretty sure I was a party planner. So was my bff. We’ve always been the dynamic duo for party planning. We threw her mom a Mexican fiesta for her birthday years ago that her mom STILL talks about to this day. I personally enjoy the madness of it all – from planning to stressing out the details and of course, seeing the end result! No better way to reward hard work then to live it up once it all comes together. In between birthdays, a road trip, a wedding, and a Drake themed birthday party (yep, it’s been a busy few weeks and YES, I will continue to bring up this Drake party as long as I live!), I also hosted a bachelorette pregame shindig at my house for the blushing bride.
From phallic-shaped marshmallows to watermelon vodka cocktails to playing ‘pin the mister on the man’, the night was nothing short of fun and laughs!
If you follow me on Snapchat, I’m sure you’ve seen all the craziness these last few weeks. My apologies for my loud, annoying voice. LOL.
Of course, no party is complete without some deliciously fun food! Aside from Oreo donuts, (which have always been a hit because I mean…who doesn’t love Oreos and chocolate and donuts!?) I made this Bacon & Beer Mac N Cheese. We literally had 24 hours to put this bachelorette party together. After a quick google search brought forth the amazing Jessica Merchant from How Sweet It Is‘s Easy Beer Mac N Cheese recipe, I was sold.
Not only was this dish SUPER cheesy, thanks to the cheddar and parmesan cheese, it was an easy-to-make and deliciously flavorful. Maybe it was the chopped applewood smoked bacon I added that made this recipe next level. In any case, cheers to many more adventures this 2016!

Beer and applewood smoked bacon infused cheese sauce mixed with elbow noodles and topped with panko crumbs then baked to cheesy, crispy perfection! If that's not the best party food combo, I don't know what is.
- 2 1/2 cups uncooked elbow noodles
- 1 teaspoon salt
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 8 ounces milk
- 8 ounces beer I used dark beer
- 8 ounces grated cheddar cheese I used shredded cheddar cheese, not a big deal
- 4 ounces grated parmesan cheese
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- pinch of nutmeg
- 1/2 cup panko bread crumbs
- 4 slices bacon cooked, cut in pieces, divided (I used applewood smoked bacon)
- Preheat oven to 375 degrees F.
- Prepare pasta according to directions on the box, minus 2 minutes of cooking time since pasta will continue to cook in the oven. Drain and set aside.
Over medium high heat, melt butter in a saucepan. Once melted and sizzling, whisk in flour to create a roux. Cook until bubbly and golden in color, about 2 minutes.
Add milk and beer into saucepan whisking constantly, then add cheeses and stir until melted. Turn heat down to medium and continue to stir, cooking for 5-6 minutes while mixture slightly thickens. Stir in 2 slices of the chopped bacon, pepper, paprika, salt and nutmeg.
Add pasta to a casserole dish, then pour cheese mixture over the top, mixing gently to combine. Top with remaining bacon, panko bread crumbs and grated parmesan cheese, if desired.
- Bake for 25-30 minutes or until bubbly and golden on top.
Remove from oven. Let cool for 5 minutes and serve immediately.
