Have you ever wanted apple pie on the go? ME TOO!
These apple empanadas are full of delicious Fall flavors! Cinnamon, brown sugar, spiced rum. Omg, I wish you could smell them through the screen!
The filling is similar to that of an apple pie and then enveloped in pastry dough, I mean what could be better.
Let me show you how to make them!
Ingredients You’ll Need
- Granny Smith apples. Crisp, sweet, tart. Perfect for these empanadas.
- Ground cinnamon and sugar. To make cinnamon sugar for the filling and to sprinkle on the outside.
- Unsalted butter. To bind it all together.
- Brown sugar. For that intense nutty, molasses flavor.
- Lime juice. To prevent the oxidation of the apples.
- Frozen pastry rounds. You can buy these pastry rounds. You can also use frozen pie crust or your favorite dough recipe and, cut out circles about 6″ in diameter.
- Egg wash. For that golden brown color.
- Powdered sugar and spiced rum. For the delicious icing.

How To Make Apple Empanadas
- Make the cinnamon sugar mixture. In a bowl, mix ground cinnamon and sugar together. Save about 2 tablespoons for later.
- Make the apple filling. Toss diced apples with the cinnamon sugar then add butter, brown sugar, and lime juice. Gently mix everything together.
- Fill the pastry rounds. Preheat oven at 350ºF. In a pastry round, add one tablespoon of the filling into the center of the circle, fold, and seal with a fork. You can also use this dough press, if you prefer.
- Bake the empanadas. Place the empanadas on a lightly greased cookie sheet 2 inches apart, brush with the egg wash, and sprinkle with cinnamon sugar. Bake for 20-25 minutes or until lightly browned.
- Make the icing. In a bowl, stir powdered sugar and spiced rum together then drizzle over empanadas. Serve immediately.

I am wondering how big in diameter is a pastry round? I made my own pie dough and I am using a pastry cutter and sealer but it seems a little bit too small since I can’t fit a rounded tablespoon in it without the filling oozing out when I seal it. I’m baking them right now anyways so I will leave a proper review when they’re done!
