To keep chocolate chip cookies soft, make sure they are slightly underbaked. They will continue to cook as they cool however it does help them stay softer for a longer time.

Let them cool before serving. Place them in the fridge for up to a week. When ready to eat, just pop in the microwave for 10 seconds to get those melty chocolate chips.
