Stir water, butter, and salt at medium-high heat, until melted. Reduce to low. Add the flour and mix until dough forms. Transfer to bowl and let cool. Whisk eggs into the dough until smooth.
Heat oil at medium heat until 325ºF. With a star tip piping bag, pipe out strips of dough and fry until golden. Don't crowd pan. Drain on a towel lined plate then toss in cinnamon sugar. Cool.
