On a plate, combine unsweetened shredded coconut, lime zest, and kosher salt. Run a lime wedge around the rim of the glasses and dip them in coconut salt mixture to coat.
Muddle mint leaves, 3 lime wedges, and sugar in a tall glass or cocktail shaker. Careful not to muddle too much. All we want is to release the minty flavor. Add coconut water, white rum, and coconut rum to the glass/shaker. Squeeze 2 tablespoons of fresh lime juice and stir/shake to combine.
Fill both glasses with ice then pour the mojito into both glasses evenly. Top with club soda, stir then garnish with lime wedges and more mint leaves. Enjoy!
