Healthy Double Chocolate Banana Muffins

Servings: 12 muffins
- 3-4 ripe bananas mashed
- 1/3 cup raw honey
- 1/4 cup coconut oil melted
- 1/2 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup unsweetened cocoa powder
- 1/2 cup dark chocolate chips
Preheat oven to 350 degrees F. Spray a muffin tin with nonstick cooking spray. Set aside.
In a bowl, add bananas, honey, oil, yogurt, vanilla and egg. Mix until well combined. Add the flour, baking soda, salt and cocoa powder. Mix until well combined then fold in chocolate chips.
Divide batter evenly into muffin tin and bake for 20 minutes or until tooth pick comes out clean. Let cool for 5 minutes then serve!
*You can freeze muffins in an resealable bag or airtight container for up to 3 months. Just heat in microwave for 30 seconds when ready to eat.
