Delicious! Used white sweet potatoes and a mandolin to slice them. Wonderful flavour and texture with the crispy tops and buttery bottoms.

unsalted butter
Yukon Gold potatoes
garlic cloves
fresh thyme
kosher salt

Arrange thin potato slices in a buttered skillet. Mix melted butter with garlic, thyme, and salt. Evenly coat the potatoes with mixture.

Bake at 375° for 1 hour until the top of potatoes are crispy. Allow to cool for 10 minutes before serving.
