Easy Cuban Vegan Bowls

To a food processor, add almond milk and lime juice. Allow to settle for 30 seconds. Add remaining ingredients. Pulse until blended and smooth. Set aside.

In a nonstick skillet, heat oil at medium heat. Add sweet potatoes and spices. Cover and cook for 8-10 min. Transfer to a plate.

Fry the plantains for about 5 min. Drain and smash to about 1/2 inch thick. Fry again for about 5 min in the same skillet, until golden brown. Drain on paper towels. Sprinkle with salt.

Assemble your bowl by evenly dividing sweet potatoes, plantains, rice, black beans and diced avocado. Drizzle with avocado ranch and serve. Enjoy!
