Cuban Roast Pork (Lechon Asado)

In a mortar and pestle, mash the garlic cloves, salt, peppercorns, onion, oregano, cumin, and olive oil until you get a paste. Set aside.

Separate the skin from the pork. Pierce and pour marinade over it. Rub the paste over it and replace  skin. Cover with foil and place in the fridge to marinate for 2-3 hrs or overnight.

Allow pork to come to room temp. Place in 375° oven for 4 hrs until internal temp is 180°. Remove. Increase temp to 450°. Remove foil, drain and reserve liquid. Bake for another 30 min, uncovered.

Remove from oven and allow to rest for 20 min before shredding with forks. Feel free to pour leftover marinade over the shredded pork.
