Cream butter and sugar together. Mix in egg and vanilla. Mix in dry ingredients. Roll to 1/4″ thick. Place on a lined baking sheet then press another piece of paper on top. Refrigerate for 1 hour.
Make the cookie rounds. Transfer to baking sheet. Bake at 350° for 10 min. Cool for 5 min. Dip into coquito icing and allow to set for 5 min before serving.
