Coconut Rice Pudding

(Arroz Con Leche De Coco)

An easy-to-make and deliciously creamy arroz con leche de coco (coconut rice pudding) made Cuban-style with full-fat coconut milk, cinnamon, and toasted coconut flakes!

Cook the rice, water, lemon zest, cinnamon stick about 10-15 mins. Remove the cinnamon and drain off excess water. Place saucepan back on the stove.

Add remaining ingredients and cook over low heat, uncovered, stirring occasionally about 30-40 minutes until thick. Remove from heat. Serve.
