In a food processor, add the corn kernels, milk, and salt. Blend until fully pureed. There will be plup.

Blend corn and milk

Strain the mixture through a metal sieve removing all the pulp. You may have to strain it a few times.

Strain corn mixture

In a pan, add the corn liquid, sugar and cinnamon. Stir until sugar is dissolved. Cook at medium heat, stirring until the mixture has thickened, about 45 minutes.

Cook corn mixture

Transfer the mixture to 4 individual ramekins. Place in the fridge for at least 1 hour so it can firm up like a custard. Serve with a sprinkle of ground cinnamon.
