Love fried rice? Here's a healthier alternative made with riced cauliflower, peas, carrots, kimchi, garlic, soy sauce, and chili paste. Ready in just 15-minutes!
2tablespoonsKorean chili pasteomit if you don't like spicy
2 tablespoons coconut aminos or low-sodium soy sauce
2-3 cups riced caulifloweror any leftover rice
3 eggs beaten
salt + pepper to taste
sliced green onions and sesame seeds for garnish
Instructions
In a skillet, add oil and garlic. Sauté for 2 minutes over medium-high heat. Add kimchi, carrots, peas, chili paste and coconut aminos/soy sauce. Mix together and cook for another 2-3 minutes.
Add riced cauliflower and cook for 1 minute. Push mixture to the sides of the skillet, leaving a hole in the center. Add whisked egg to center of pan and cook for 1-2 minute.
Using a spatula, stir the egg to scramble then mix with the rest of the rice mixture. Season with salt and pepper to taste. Serve with green onions and sesame seeds as garnish. Enjoy!
