– green pepper – yellow onion – garlic minced – black beans – water – extra virgin olive oil – red wine vinegar
Soak the beans in a pot full of water overnight. Drain the next day and add 5 new cups of water. Bring to a boil & cook them for 60 min, stirring frequently, with the lid on. Careful not to let them dry out.
If using, canned black beans, skip this step!
If using, dried black beans:
In a saucepan, add the black beans (softened or drained from the can), water, olive oil, red wine vinegar, sugar, salt, oregano, cumin, pepper, & a bay leaf.
