Frijoles Negros (Cuban Black Beans)

These frijoles negros are a silky smooth black bean recipe cooked to perfection. The most flavorful Cuban side dish served with white rice!

Soak the beans in a pot full of water overnight. Drain the next day and add 5 new cups of water. Bring to a boil & cook them for 60 min, stirring frequently, with the lid on. Careful not to let them dry out.

If using, canned black beans, skip this step!

If using, dried black beans:

Heat olive oil in a skillet and begin making the sofrito (garlic, green peppers, onion mixture).

Start with sofrito

In a saucepan, add the black beans (softened or drained from the can), water, olive oil, red wine vinegar, sugar, salt, oregano, cumin, pepper, & a bay leaf.

Simmer with the rest of the ingredients.

Reduce to low heat and cook for 20 minutes until desired consistency. What you’re looking for is a thick and creamy consistency.
