Tamal en Cazuela

(Cuban Tamal Casserole)

Tamal en cazuela is basically Cuban tamales without the chore of actually making Cuban tamales. It's absolutely to die for. You and your family will absolutely LOVE this dish!

INGREDIENTS

– boneless pork shoulder – mojo marinade – fine yellow cornmeal – cream-style sweet corn – olive oil – salt, cumin, black pepper – sofrito – cooking wine + water – tomato sauce – parsley

Marinate pork in mojo marinade. In a food processor, pulse the cornmeal, cream-style sweet corn, salt, cumin, and black pepper until thick. Set aside.

Start the corn puree

Brown pork on all sides, in batches. Set aside. In same pan, sauté onions and peppers at medium heat until tender, then sauté garlic for 1 minute.

Sauté the sofrito

Next, stir in corn mixture from the food processor, cooked pork pieces, dry cooking wine, tomato sauce, and water. Reduce heat to low.

Add remaining ingredients

Simmer for 30-35 minutes, at low heat, until thickened, stirring regularly to keep from sticking. When your spoon can stand up in the Dutch oven, it’s ready.

Simmer and stir!
