Coquito Cheesecake Bars (Puerto Rican Eggnog)

Creamy cheesecake bars with the sweet flavors of Puerto Rican eggnog made with a buttery graham cracker crust, rum, coconut, and cinnamon.

Mix crushed graham crackers, butter, and sugar together. Transfer into a prepared baking dish and press down firmly using the bottom of a cup. Set aside.

Mix all filling ingredients and pour over crust evenly. Bake at 350° for 25-30 minutes. After cooling for 2-3 hours, top with cinnamon and coconut before serving.
