Avocado Chimichurri Fish Taco Recipe

Season the fish on all sides. Cook cod, skin side up, for 5 min in oil over medium-high heat. Flip the filet and cook for another 5 min. Break into large chunks.

In a food processor, add spices, olive oil and lime juice. Pulse until well combined. Add avocado and give it a few more pulses until desired consistency.

Make chimichurri

Divide the cod evenly into the warm corn tortillas. Add avocado chimichurri, sliced red onions, and parsley. That’s all folks!
