Ingredients

  • 6 slices multigrain bread toasted
  • 3 Hass avocados peeled, seeded, use 1/2 per toast
  • 1 egg sunny side up or poached
  • 1/2 cup mango cut in chunks
  • Trader Joe's Chili-Lime Seasoning (or Tajin)
  • 3 slices sweet plantains cooked
  • feta cheese crumbled
  • 2 ounces crab meat
  • 1 tablespoon melted butter
  • cilantro roughly chopped
  • Trader Joe's Everything Bagel Seasoning
  • 2 scallions thinly sliced
  • red pepper flakes
  • 2 slices smoked salmon thinly sliced
  • capers
  • lime juice, olive oil, salt and pepper to taste

Instructions

Avocado Toast with Egg

  • Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with egg and black pepper. 

Avocado Toast with Mango

  • Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with mango chunks and chili-lime seasoning or Tajin.

Avocado Toast with Sweet Plantains

  • Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with sweet plantains and feta cheese.

Avocado Toast with Crab

  • Mash 1/2 avocado. Add lime juice and salt. Mix crab meat with melted butter. Spread toast with mashed avocado. Top with crab meat and cilantro.

Avocado Toast with Everything Bagel Seasoning

  • Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with everything bagel seasoning, scallions, red pepper flakes, and a drizzle of olive oil. 

Avocado Toast with Smoked Salmon

  • Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with smoked salmon, capers, and a drizzle of olive oil.
