Vegan Black Bean Croquettes

Crispy, bite-size logs filled with black beans, onions, and spices then coated in breadcrumbs. Delicious snacks for any day of the week!

Pulse croquette ingredients in food processor until well combined. Place in fridge for 10 min. Then form logs from the mixture.

Dip each croquette in a bowl of oat milk and then coat in bread crumbs. Bake at 425° on a lined baking sheet for 20 minutes until cooked through/crispy.
