Potaje de Lentejas (Cuban Lentil Soup)

Foolproof, one-pot meal, and no need to soak the lentils overnight. Serve this comforting lentil soup with white rice or enjoy it on its own.

INGREDIENTS

– dried lentils  – olive oil – onion, bell pepper, garlic – diced tomatoes – ground cumin, dried oregano – bay leaves, salt, pepper – smoked ham, chorizo – chicken broth – carrots, potatoes

Saute the onions, peppers, and tomatoes in oil for 2-3 min. Saute garlic for 30 sec. Stir in spices. Add the meat. Cook for another 2-3 minutes, stirring occasionally.

Make the sofrito

Stir in the rinsed lentils. Add 5 cups of chicken broth and the bay leaves. Bring to a boil for 2-3 minutes.

Add more ingredients

Add remaining veggies. Reduce heat. Cover and simmer for 30-35 min. Taste and adjust seasonings as needed. Remove the bay leaves.
