Whisk polenta into heated chicken stock. Reduce heat to low and stir for 15-20 min. Stir in butter, cheese, and spices until smooth.

Spread polenta into a baking dish and refrigerate for 1 hour. Cut into fries and add to a lined baking sheet.

Bake at 450° for 40 minutes, flipping at the 20-minute mark. Serve with spicy ketchup. Enjoy!
