In a bowl, mix wet and dry ingredients until combined. Fold in chocolate.
Using a cookie scoop, scoop dough and form it into 1" balls. Place on a baking sheet and refrigerate the dough balls for 1 hour.
Preheat oven to 350ºF. Line a baking sheet with parchment paper and place dough balls on the baking sheet. Bake for about 10-11 minutes until the edges are golden brown.
