Cuban Sweet Corn Fritters

Crispy on the outside and tender on the inside, it's the perfect 20-minute appetizer or snack for any day of the week!!

– 1 1/2 cups whole corn kernels – 6 tbsp sugar – 1/2 tsp salt – 1/2 tsp ground anise seed – 1 large egg – Pork lard for frying

Carefully remove the corn kernels from the cobs with a sharp knife.

Cut off the corn.

Pulse the corn until just blended (not liquid!). Transfer to a bowl and stir with the remaining fritter ingredients. Set aside.

Pulse corn and combine batter.

In a deep skillet, heat the oil to 375ºF. Using a spoon, drop 6 spoonfuls (about 1 tablespoon each) into the hot oil.

Fry the fritters.

Fry for 2-4 minutes, while flipping them over, so they get golden brown on all sides. Drain the fritters on a paper towel-lined plate.

Drain the fritters.
