Fricase de Pollo (Cuban Chicken Fricassee)

Fricase de Pollo is a hearty chicken stew cooked in a flavorful tomato-based, broth-like wine sauce with potatoes, capers, and olives. The best of the best Cuban comfort food!

INGREDIENTS

– chicken pieces – mojo marinade, olive oil – onion, bell pepper, garlic – potatoes – tomato sauce – dry cooking wine, water – olives, capers – spices

In a bowl, add chicken and mojo marinade. Place in the fridge and marinate for 1-2 hours. Remove from the marinade, pat dry, and season with salt and pepper.

In a Dutch oven, heat oil at medium-high heat. Brown the chicken on all sides, in batches, being careful not to overcrowd the pan. Transfer to a plate. Set aside.

Add the onions and green peppers and saute for 5 minutes or until tender. Add the garlic and saute for 1 minute.

Make the sofrito

Add ingredients (not potatoes). Bring to a boil. Cook for 5 min then reduce heat. Add the chicken and potatoes in. Simmer for 45 min to 1 hour, covered with a lid.

Start the fricassee

At the 30 minute mark, check to see if the stew is drying out and add water if needed. Continue to cook, covered, until the chicken and potatoes are fork-tender.
