Let's make it!
1/2 cup
diced green pepper
2 cans
2 tsp
Cuban black beans (or dried)
sugar
1/2 cup
1 tbsp
diced yellow onion
olive oil
1 cup
water
variety of spices

garlic cloves
red wine vinegar

If using, canned black beans, skip this step! Soak the beans in a pot full of water overnight. Drain the next day and add 5 new cups of water. Bring to a boil & cook them for 60 min, stirring frequently, with the lid on. Careful not to let them dry out.

Heat olive oil in a skillet and begin making the sofrito (garlic, green peppers, onion mixture).

In a saucepan, add the black beans (softened or drained from the can), water, olive oil, red wine vinegar, sugar, salt, oregano, cumin, pepper, & a bay leaf.

Reduce to low heat and cook for 20 minutes until desired consistency. What you’re looking for is a thick and creamy consistency.
Once you make them, you can serve them over white rice. Prepare to love the flavor of these frijoles negros!
