Chorizo Mushroom Sweet Potato Hash

A healthy, comforting sweet potato hash made with crumbled Mexican chorizo, and portobello mushrooms. Paleo and Whole30 compliant!

In a large skillet, spray with cooking spray. Add chorizo and brown at medium heat until fully cooked. Transfer to a plate.

Cook chorizo

Reduce heat to medium-low. Add 1 tbsp of oil, sweet potatoes, and spices. Cover and cook for 8-10 minutes until softened and cooked. Transfer to a plate.

Cook sweet potates

Add remaining oil and garlic. Cook for 30 sec. Add mushrooms and spices. Cook until browned and tender. Add the chorizo and sweet potato back to the skillet and stir.

Finish cooking hash

Cook the sweet potato hash for another minute. Serve with a fried egg on top. Enjoy!
