Peel shrimp. Boil cold water, shrimp shells, and salt for 10 min. Strain through a fine mesh strainer.

Make shrimp stock.

In a dutch oven, heat 2 tbsp of olive oil over medium-high heat. Add onion, green pepper, and garlic. Sauté for 5 minutes.

Make the sofrito.

Sauté pimentos and sauce for 1 minute. Add rice, stocks, and spices. Boil then reduce to low. Cover and simmer for 15 min. Remove from heat but keep the lid on for another 5-10 min.

Cook the rice.

Season shrimp and cook until pink. Fluff the rice with a fork. Gently fold in peas and shrimp until well combined.

Cook shrimp and combine.
