Almond Butter & Guava Jelly Muffins

Soft, fluffy muffins made with swirled almond butter and guava jelly. A fun spin on PB&J muffins for the perfect on-the-go breakfast!

INGREDIENTS

– unsalted butter – brown sugar – granulated sugar – egg – whole milk – all-purpose flour – baking powder, baking soda – salt – almond butter – guava jelly

In a large bowl, cream butter and sugars together. Mix in egg and buttermilk until well combined. Stir in flour, baking powder, baking soda, and salt until just combined.

Make the batter.

Divide batter into a prepared muffin pan, filling each muffin cup 3/4 full. Swirl the almond butter and guava jelly on top of each muffin with a toothpick.

Swirl the top.

Place the muffins in a 425° oven and immediately turn down the heat to 350º. Bake for 20-22 minutes. Let cool and serve. Enjoy!
