Ajiaco Cubano

(Cuban Country-Style Stew)

Ajiaco Cubano is a traditional Cuban country-style stew that's hearty, flavorful, and the perfect cozy meal. 

INGREDIENTS

– onions, bell pepper, garlic – tomato sauce – cumin, salt + pepper – pork shoulder – flank steak – chicken thighs – boniato, yuca, malanga – butternut squash, corn – plantains

In a large pot, heat olive oil at medium heat. Saute onions, green bell peppers, garlic, cumin, salt, and pepper for 5 minutes until softened.

First, make the sofrito

Season meat with salt. Add to the pot with enough water to cover them. Simmer on medium-low for 1 hour. Remove from the pot and skim any fat off.

Cook the meat

Stir the boniato, yuca, malanga, squash and tomato sauce into the pot with broth. Cover and simmer for 15 minutes. Add in the corn, plantains and lime juice.

Start cooking veggies

Cover and cook at medium-high for 20-25 minutes or until veggies are tender. Add meat back in and gently stir to combine. Serve with lime wedges.
