(Cuban Fried Pork Chunks)

INGREDIENTS

– boneless pork shoulder – sour orange juice – garlic – dried oregano – ground cumin – black pepper – Vegetable oil for frying

Toss the pork chunks and marinade ingredients. Cover and marinate in the fridge for at least 1 hour. Remove the pork from marinade and pat dry.

Heat oil to cover the pork to medium heat. Working in batches, add pork and turn up to high to brown on all sides, about 5 min. Turn back down to medium-high about 10 min.
