Cover peeled plantains with water and 1 tsp of salt. Bring to a boil. Reduce heat and cook for 15 minutes or until tender. Drain and let cool slightly.
Melt butter over medium heat for about 5 minutes. Once the butter turns an amber color, remove from the heat and stir in 2 tsp of water and the garlic. Cool slightly.
Mash plaintains. Stir in ricotta, salt + pepper. Slowly add in flour until a dough forms. If the dough is sticking to the sides of the bowl, add more flour, 1 tbsp at a time.
Fry the gnocchi in butter at medium-heat heat, until a crust forms on both sides. Transfer to a bowl and toss with the butter sauce. Sprinkle with extra parm.
