Preheat oven to 350ºF. Line a baking sheet with parchment paper.
Place thinly sliced plantains on a baking sheet. Spray with avocado oil then season with salt. Bake for 20 minutes until golden and crispy.
To make the vegan garlic dip, add the mayo, garlic, almond milk, lime juice, salt, and pepper to a food processor. Pulse until combined. Taste and adjust with salt or pepper.
Serve baked plantain chips with garlic dip. Enjoy!
