1lbboneless, skinless chicken breast, cut into 1-inch cubes
2cupsfresh pineapple, cut in 1-inch chunks
6-8wooden skewers, soaked in water for at least 20 minutes
In a large bowl, add pineapple juice, lime juice, garlic and cilantro. Give a quick stir then add chicken. Cover and refrigerate 1-2 hours.
In a small bowl, add cayenne, smoked paprika, cumin, garlic, salt and pepper. Mix together. Set aside.
Preheat grill pan or grill to medium high. If using a grill pan, lightly brush it with oil then heat it over medium high heat.
Remove chicken from marinade and rub in spices. Add chicken onto wooden skewers, alternating with pineapple and chicken. Grill kabobs for 8-10 minutes, turning occasionally to make sure all sides are cooked. Serve immediately. Enjoy!
