Spicy Pineapple Chicken Kabobs

Easy to make Grilled Spicy Pineapple Chicken Kabobs! Chicken marinated in a pineapple lime marinade then skewered with pineapple, seasoned with spices and grilled to delicious perfection!

Pineapple Lime Marinade

  • 1 cup unsweetened pineapple juice
  • 1/2 cup lime juice
  • 1 bunch cilantro , chopped
  • 1 garlic clove , minced

Spicy Pineapple Chicken Kabobs

  • 1 lb boneless , skinless chicken breast, cut into 1-inch cubes
  • 1/2 tablespoon cayenne pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups fresh pineapple , cut in 1-inch chunks
  • 6-8 wooden skewers , soaked in water for at least 20 minutes


  • In a large bowl, add pineapple juice, lime juice, garlic and cilantro. Give a quick stir then add chicken. Cover and refrigerate 1-2 hours.
  • In a small bowl, add cayenne, smoked paprika, cumin, garlic, salt and pepper. Mix together. Set aside.
  • Preheat grill pan or grill to medium high. If using a grill pan, lightly brush it with oil then heat it over medium high heat.
  • Remove chicken from marinade and rub in spices. Add chicken onto wooden skewers, alternating with pineapple and chicken. Grill kabobs for 8-10 minutes, turning occasionally to make sure all sides are cooked. Serve immediately. Enjoy!
