Make pineapple-jalapeño salsa

In a bowl, mix together diced pineapple, jalapeño, red onions, cilantro, juice from 1 lime, and salt until combined. Place in the fridge to set while you make the salmon.

Make the seasoning mix

In another bowl, add the smoked paprika, cayenne, chili powder, cumin, oregano, salt and pepper and mix together until combined.

Season & cook the salmon fillets

Season salmon with the blackened seasoning on all sides. In a nonstick skillet, cook salmon fillets for 5 minutes on each side on medium-high heat.

Serve salmon with pineapple salsa

Transfer salmon fillets to a plate and top with pineapple-jalapeño salsa. Serve with white rice or a salad. Enjoy!
