Almond Butter & Guava Jelly Muffins

In a large bowl or stand mixer, mix both the wet and dry ingredients until well combined then spray a 12 cup muffin tin with nonstick cooking spray.


Divide batter evenly into the prepared muffin tin, filling each muffin cup 3/4 full. Swirl the almond butter and guava jelly on top of each muffin with a toothpick.


Preheat oven to 425ºF. Place the muffin tin in the oven and immediately turn down the heat to 350ºF. Bake for 20-22 minutes. Enjoy!
