Classic Sweet Potato Casserole

There’s just something comforting about the smell of cinnamon, the sweetness of the warm mashed sweet potatoes, and toasted marshmallows that just make me happy.

I mean… all types of food make me happy but you know what I mean. ;)

Would you consider sweet potato casserole a dessert or a side dish?

Hard to decide, right?

I’ve always considered and enjoyed this as a side dish. Kinda like a pregame to the real dessert. OH YEAH. I know a lot of people that rather enjoy sweet potato casserole as dessert. Either way, it’s a win win!

Whether it’s a potluck, Thanksgiving or just dinner with the fam, this classic sweet potato casserole is by far the BEST side dish!

For Thanksgiving, I make this every year. Every time, there’s a potluck, I bring sweet potato casserole. If it’s Friendsgiving, guess what I’m bringing? You guessed it – sweet potato casserole.

Let’s talk about how incredibly easy it is to bring all this together.

You literally throw a bunch of sweet potatoes (peeled and cut in cubes) in a Dutch oven or pot, cook them until tender and then mash them UP.

You mix in all the spices which is what gives these mashed sweet potatoes its cinnamon sweet flavor. It just compliments the sweet potato so well.

Here’s the best part. You can stop right here and make the rest tomorrow.

Say whaaaa. Yep, you can totally make this ahead of time.

Once the sweet potato mixture has cooled and all the spices are well combined, add the mixture to the casserole dish or baking pan that you will be making it in and place it in the fridge until the next day.

The next day, you bring the casserole dish to room temperature then top with pecans and mini marshmallows. Bake for about 15-20 minutes in the oven and that’s it!

Ta-daaaa. See how easy that is?! That’s why I make this every year!

Alternatively, you can, of course, make it all in one shot and serve warm. The final outcome will always be ooey gooey, cinnamon-y and crunchy. I promise there won’t be any leftovers.

Recently, I went to Disney. You know, my second home. In case you didn’t know, I frequent Le Disney Parks quite often. Being an annual pass holder, you’ll find me escaping to Orlando like twice a month. So I’m either going north or south. Disney World or the Florida Keys. My two favorite weekend getaways. Best perk of being in Miami is that we have it all just a drive away.

Every time we go to Disney, I always sit and stare at all the kitchen stuff. Naturally. My dream is to someday have an all-white kitchen with Mickey decor. Not crazy color happy Mickey decor; all-white Mickey decor. I want it all to look pristine! Even though, I make a crazy mess in the kitchen sometimes. I don’t care; I want it to look straight out of a magazine. Sigh. This dream will come true someday.

Until then though, I’ll settle for Mickey sprinkles. Ha!

In case you don’t have Mickey sprinkles, you can use regular sprinkles. Don’t worry, you won’t alter the taste or anything. I was just WAY too excited to buy and use these. What better excuse than to make marshmallow treats!

Oh and by the way, these Chocolate Popcorn Marshmallow Treats were VERY addicting. So, be warned. They are salty, sweet, chocolatey, and DANGEROUS. I made two batches and let’s just say one of them somehow DISAPPEARED… yeah…

I mean melted marshmallows with chocolate and popcorn. What’s not to like!? If you’re not a HUGE fan of too much sweet, you can sprinkle a bit of sea salt on top to balance out all the sweet.

Ingredients
  • 8 cups popped popcorn
  • 1/3 cup colored sprinkles any kind
  • 1 teaspoon salt
  • 16 ounces mini marshmallows
  • 2 tablespoons butter
  • 1 teaspoon sea salt
  • 1/3 cup colored sprinkles any kind
  • 1 cup dark chocolate chips melted
Instructions
  1. Line an 8x8 baking pan with parchment paper and spray with non-stick baking spray.

  2. Over medium heat, melt the butter in a saucepan. Add the marshmallows and continuously stir to combine until melted and smooth.

  3. Stir in the popcorn, salt, and some sprinkles and mix until everything is well combined. Immediately transfer the mixture onto the baking pan pressing it firmly into an even layer. 

  4. Drizzle with melted dark chocolate and sprinkle with extra sprinkles on top. Let it harden for about 20 minutes and then cut and serve.*

*This recipe makes 9-12 pieces depending on how you cut them. Also, make sure to run your knife under hot water for easy cutting.

It’s pretty obvious that I’m completely obsessed with salted caramel. I’ve added it to popcorn and cookie bars. Heck, my favorite ice cream is salted caramel!

Today, we’re adding salted caramel to s’mores!

This is 1000% one of the easiest desserts you’ll ever make. So simple. So ooey gooey delicious. It’s dangerous. Be warned.

WHYYY is salted caramel so good!? And why is it so easy to make? Every time I try to talk myself out of making these s’mores, I end up with another batch. Oy vei.

Whether it’s a night in, a special occasion, or a random Tuesday, these Salted Caramel Skillet S’mores are perfect for any day! All you need is some great quality dark chocolate chips, big fluffy marshmallows, a small cast iron skillet, graham crackers and homemade salted caramel sauce.

Chocolate chips and marshmallows are toasted in a cast-iron skillet, then topped with a drizzle of homemade salted caramel, resulting in these DELICIOUS Salted Caramel Skillet S'mores!

Servings: 4 people

Ingredients
  • 1/2 tablespoon butter
  • 1 cup chocolate chips (semi-sweet, milk chocolate, or both)
  • 20-22 marshmallows (not the mini marshmallows, although you can use that, if you'd like)
  • 6-inch iron skillet
  • graham crackers
  • Homemade Salted Caramel (recipe link in notes)
Instructions
  1. Place 6-inch cast iron skillet in oven. Preheat oven to 450°F with skillet inside. Once oven is preheated, remove hot skillet from the oven with oven mitts. Be careful! The skillet will be very hot.
  2. Place butter in the skillet. Using a pot holder, hold the handle and swirl the skillet so that the melted butter coats the bottom and sides.
  3. Pour chocolate chips in an even layer onto the bottom of the skillet. Then arrange the marshmallows over the (melted) chocolate chips. Be careful! The skillet will be very hot!
  4. Place skillet back in the oven and bake for 5 minutes or until marshmallows are toasted.
  5. Remove the skillet from the oven and allow to rest for 5 minutes. Drizzle toasty marshmallows with homemade salted caramel sauce. Serve immediately with graham crackers. Be careful! The skillet will be very hot!
