Turkey Picadillo Lettuce Wraps {Seasoned Ground Turkey!}

Flavorful, easy-to-make lettuce wraps made with Cuban-style seasoned ground turkey. Perfect for a weeknight meal and lunch the next day!

If you asked me what was the recipe I cooked most often – this would be it.

Ground turkey is ALWAYS on my shopping list. Sometimes, I go with lean ground meat too.

For the most part, I’m one of those weird people that really likes ground turkey.

Go figure.

It’s no secret that Cuban food is too good for words. Not the healthiest cuisine, obviously, but definitely quite delicious! I’ve even seen YouTube videos of non-Cuban peeps attempting to make tostones and vaca frita.

I get it. TRUST ME. I grew up in a Cuban family!

Enter picadillo.

Picadillo [pee-ca-dee-yo] is a classic Cuban dish made with ground beef, tomato sauce, raisins, olives, and lots of spices. This is usually served over white rice. And really, it’s the easiest dish to make on a weeknight. We had it often in my house and even enjoyed it the next day as leftovers.

I mean I don’t know, do you think I like making recipes with picadillo?

Ha! Every week, I’ll spend an hour meal prepping for the week and there’s usually ground meat involved which I then turn into different recipes.

And now here’s a new one to add to the list. Lettuce wraps!

Simple, flavorful. Never dry like ground turkey usually is, all thanks to the tomato sauce. I never make my picadillo as soupy as it’s authentically supposed to be but it definitely does NOT lack flavor.

Feel free to add toppings to these wraps too. Tomatoes, black beans, green onions, more olives. You can never have enough olives.

Ingredients
  • 3/4 pound ground turkey
  • 1/4 onion finely chopped
  • 1 cloves garlic minced
  • 1/2 tomato chopped
  • 1/4 green pepper finely chopped
  • 1 tablespoons cilantro
  • 2 ounces tomato sauce
  • 1/2 teaspoon ground cumin
  • 1 tablespoons green olives chopped (plus some for garnish)
  • salt and pepper to taste
  • 1 head Boston lettuce Bibb or iceberg works too
Optional Toppings
  • black beans
  • tomato chopped
  • scallions white and light green parts chopped
Instructions
  1. In a large skillet, brown ground turkey on medium heat and season with salt and pepper. Use a wooden spoon to break the meat apart. When meat is no longer pink, drain all liquid from the skillet.

  2. While the meat is cooking, chop onion, garlic, green pepper, tomato and cilantro. Add to the meat.

  3. Continue cooking on low. Stir in olives, cumin, and tomato sauce. Reduce heat and let simmer about 15 minutes or until the liquid has evaporated.

  4. To serve, divide the lettuce leaves among 4 plates and spoon the ground turkey into each of the leaves. Garnish with sliced green olives. Top with black beans, chopped tomato, and scallions if desired. Enjoy!

Turkey Picadillo Flatbread {Seasoned Ground Turkey}

Black bean hummus, seasoned cauliflower rice, Cuban-style ground turkey {turkey picadillo}, and two sunny side up eggs on a flatbread!

You know when you want a really hearty, flavorful meal but hate that ‘so-full-you-can’t-breathe’ feeling? Well, this is the perfect solution.

Dieting is hard. Very hard. Tis why I don’t [can’t] diet. As I mentioned in my tropical green juice post earlier this week, I prefer to live a balanced life. You know, a life where salad for lunch with a cookie for dessert is completely acceptable.

A life with no cookies is no way to live!

I’ve never been able to stick to any diet. NEVER. I remember in my junior year of high school, I attempted the Atkins diet and failed miserably after 2 days! LOL. I remember grabbing a box of cereal and chomping down a handful out of complete desperation. What a disaster.

By the way, I’m in no way trying to get all Oprah on you by telling you how to live your life. If you have a medical condition or a dietary restriction, by all means, follow your doctor’s orders.

I’m clearly no expert. I just love to eat, and I’m simply sharing what has worked for me. Moderation has always been the best method for me living a sensible life. Dieting and depriving myself of foods I love affects my overall mood and just makes me completely unhappy.

Planning my day/week also helps immensely. Sometimes life happens and you can’t stick to it. You have to just forgive yourself and try again next meal! Take it one meal at a time and make the best choice possible each time.

Example: If I know I’m going to a client dinner at night, I make sure breakfast, lunch, and snacks that day are as sensible as possible. This is how this flatbread was born.

This Turkey Picadillo Flatbread was so easy to make and assemble. The best part being that you can completely customize it to your liking! I love versatile recipes.

First, you make the ground turkey (or use leftovers – pulled pork, chicken, whatever you have at hand). Then, you make the black bean hummus. I made a VERY simple alternative to the regular black bean hummus recipes. In other words, I didn’t use tahini and too much oil. Feel free to make your favorite black bean hummus recipe though!

Finally, you make the cauliflower rice and eggs. I used Trader Joe’s Riced Organic Cauliflower which only takes 4 minutes to make in a pan. Of course, I added a bit of complete seasoning to amp up the flavor. Gotta spice everything up, guys!
