Crispy Thin Garlic Rosemary Roasted Potatoes

I’m always on the hunt for easy side dish recipes. Side dishes that can go with anything on any occasion.

You can never have enough options, am I right?

I feel like potatoes are so versatile. You can never go wrong with them!

These Crispy Thin Garlic Rosemary Roasted Potatoes are no exception. They are sooo easy to make and so delicious.

Definitely not quick, but for sure easy. If you have a mandoline, that’s even better. If not, you can buy this one.

Here’s how I brought these babies to life. I grabbed a bunch of gold potatoes.

Gold potatoes are the best for this since they are buttery, slightly sweet and have the BEST texture. Trust me on this one. So you grab a bunch of gold potatoes and slice them in half.

One at a time, you slice them thinly with a mandoline. You can, of course, use a knife but a mandoline is way easier and you’ll get a more consistent cut.

Are you with me? Ok. As you slice each potato into thin slices, keep them in little slice packs so they are easier to arrange in the pan later.

Once you cut all the potatoes, you then add them to a bowl with melted butter (save some for later, about a tablespoon or so), garlic, rosemary, and salt.

Toss them a bit and then butter the pan really well with the remaining butter.

Arrange the potato packs/slices in a circular, vertical way in the pan and place in the oven.

Ta-da! Potatoes Level PRETTY!

How easy was that? Not only is the dish aesthetic AF (especially for holidays), they are also DELICIOUS. Buttery, garlicky, and crispy. YES.

Look at you, looking all profesh with these delicious sliced potatoes AND a pretty side dish.

Who doesn’t love potatoes?

I feel like potatoes are one of those key staples that exist in every cuisine worldwide.

Whether mashed, smashed, oven baked or fried, potatoes are convenient and make for some of the most delicious and versatile dishes. Then, of course, we have fries. Why are fries my ultimate weakness?! Omg.

I swear every time I see a plate of fries, I just can’t say no. I embrace being a salad with a side of fries kinda girl. Not mad one bit.

My mom used to make homemade fries for us using potatoes growing up too and they were always delicious.

Whether you order a plate at dinner or make them at home, there’s just no wrong way to enjoy fries!

For this recipe, I used yellow potatoes to make crispy baked fries.

Yellow potatoes are bright and golden in color. They have a smooth, buttery texture and a slight sweet taste when compared to other kinds of potatoes which make them perfect for salty toppings and dips.

It’s the perfect combo to balance out all the flavors if you ask me!

You can also use yellow potatoes for grilling, mashing, or roasting. Believe me when I say, these came out perfectly crispy! Just make sure to dry them VERY well after you soak them for a bit.

You guys…these crispy baked mojo chicken wings are marinated overnight in a simple, homemade garlic-citrus marinade are OUT OF THIS WORLD.

Granted, anything garlic, citrus, Cuban-style is going to be at the top of my flavor list but trust me when I tell you…this was AMAZING.

If you’re thinking that the only way to get crispy wings is to grill or fry them, I’m here to tell you – you can BAKE them too!

I did the same thing with my Crispy Baked Garlic Parmesan Chicken Wings and Guava BBQ Chicken Wings.

I promise these will blow your mind!

To make this simple homemade mojo marinade, all you need is garlic, onion, orange juice, lime juice, oregano, peppercorns, and salt. Pulse the minced garlic and onion in a food processor until finely chopped. Add two parts orange juice to one part lime. Add oregano, black peppercorns, and salt. Blend until smooth. That’s it! Here are some tips, just in case.

You have to marinate the chicken wings overnight in the fridge if you want the amazing flavor.

The longer you marinate the chicken, the better!

That’s the easy part. Just place them in the bowl with the marinade, and into the fridge they go. Bring them to room temperature the next day, add spices, bake and DONE. Pair these crispy mojo chicken wings with my favorite Cilantro Garlic Sauce and they’ll be even MORE delicious!

You can’t just take my word for it, guys. You gotta make them for yourself and your friends/family.

Ingredients
  • 2 pounds chicken wings (tips removed; drumettes and flats separated)
  • 1 cup mojo marinade see homemade recipe in notes
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • salt and pepper to taste
Instructions
  1. In a bowl, add chicken wings and mojo marinade and place in the fridge for at least 1 hour (or overnight, the longer the better).
  2. Remove chicken from fridge and bring to room temperature.
  3. Preheat oven to 425 degrees F.
  4. Lay the chicken wings on a lined baking sheet sprayed with cooking spray. Season the chicken wings with garlic, cumin, oregano, salt and pepper.
  5. Bake the chicken wings for 40-45 minutes or chicken wings are cooked through.
  6. Remove from oven. Serve hot with your favorite wing sauce or cilantro garlic sauce.
