Gaby from What’s Gaby Cooking just came out with a new cookbook called “What’s Gaby Cooking“. Appropriate, huh? It’s SO FUN. Colorful food, beautiful photography and just about anything you can think of is in this book. From salads to pizza, there’s something in there for anyone and for any meal.
These Garlic Wild Mushrooms, for example, are the perfect side dish! I swear I’ve been eating them all week with my meals.

Gaby’s book is all about living the California life. To me, I think “the California life” is similar to Miami life. Well, not so much. Miami is way more humid, way more of a party town, and the farmer’s markets here are not always the best. We do have the beach literally minutes away with WARM waters and lots of Cuban food! I blame Cuban food for us not being more of an organic community. It’s just too good to give up!
Honestly when I look at the lifestyle photography in this book, it makes me want to move to California ASAP. For so long, I wanted to move to NYC. For soooo long. I always talked about it and dreamed about walking the streets as I left my fancy agency job. Grabbing drinks with my friends like in Sex & The City.
And then dream over. I got over it. Not sure when the dream died but it did. Now I want that bicoastal life.
I still love Miami, obvs. I will forever love Miami, it’s home. But imagine having a home in Miami (which I do) and another one in California.
Imagine having Kardashian money and being able to go to California for produce and flying back home to cook it in Miami. LOL. Oh a girl can dream.
These lemon garlic wild mushrooms are BOMB. Made quickly by just browning the mushrooms then adding the salt, pepper, garlic, parsley and once that’s all done, you squeeze lemon all over it. Talk about so fresh and so clean clean.

Lemon Garlic Wild Mushrooms
- 4 tablespoons olive oil
- 1 1/2 pounds mixed wild mushrooms cremini, shiitake, porcini, portobello
- salt and pepper to taste
- 4 cloves garlic chopped
- 2 tablespoons roughly chopped flat-leaf parsley
- 1 1/2 tablespoons fresh lemon juice or more to taste
- In a skillet, heat olive oil over medium-high heat. Add mushrooms and cook until golden brown, about 12-14 minutes then add salt and pepper to taste. Add garlic and parsley. Cook for about 1 minute. Add lemon juice and remove from the heat. Adjust salt and pepper as needed. Serve immediately. Enjoy!
