3 Quick + Easy Recipes with Avocado

There’s no question, I absolutely LOVE avocados. I eat 1/2 of an avocado daily for either breakfast, lunch or dinner. It truly is an obsession. That’s why I’m SO excited to be partnering with Avocados From Mexico to bring you 3 fun, new recipes to try with Avocados from Mexico! As I’m sure you know, adding avocados to your daily meals is a great way to keep things flavorful and balanced.

So, let’s get right to it. Are you ready for these 3 delicious avocado recipes? Let’s do this!


Look forward to waking up by making this super simple and uncomplicated breakfast pizza! Now, who wouldn’t want to start their day with pizza?! After all, it is the most important meal of the day. Pizza for breakfast goals!

All you’ll need is avocado, red pepper flakes, bacon, a sunny side up egg (or however you prefer to enjoy your eggs), and goat cheese. You can bring this pizza to life in just minutes!

1 whole wheat pizza crust, store-bought
1/2 teaspoon olive oil
1 ripe Avocado From Mexico, cut in cubes
1/2 teaspoon red pepper flakes
Salt and pepper to taste
1 egg, cooked sunny-side up
2 slices bacon, cooked, roughly chopped
1 tablespoon goat cheese, crumbled


  1. Preheat oven to 450 degrees F. In a lined baking sheet, lightly brush pizza crust with olive oil then bake until crispy, about 8-10 minutes.
  2. While the pizza crust is baking, mash the Hass avocado. Add salt and pepper. Set aside.
  3. Remove pizza crust from oven and top with mashed avocado first then the remaining ingredients in this order: red pepper flakes, egg, bacon crumbles, and goat cheese.


Let’s face it, without a little planning, lunch ends up being a royal mess! You forget to pack your lunch, you forget to eat or worst – you make terrible lunch decisions. That’s why simple lunches like this Black Bean Quinoa Bowl makes it impossible for you to ever skip lunch. Just 3 elements!

If you have 15 minutes, you can make quinoa on the day of or make it earlier in the week during meal prep then store it in an airtight container in the refrigerator. When you’re ready to assemble the bowl, all you have to do is add quinoa, black beans, and chop up the avocado. That’s it! A filling and nutritious lunch in no time. Doesn’t get any easier than that!

1 cup quinoa
1/2 cup black beans, drained
1 Avocado From Mexico, cut in cubes
Cilantro for garnish
Salt and pepper to taste


  1. Add rinsed quinoa to a small saucepan. Add water and bring to a boil over high heat. Once boiling, turn down the heat, cover, and simmer for 15 minutes. Once cooked, fluff with a fork.
  2. Assemble the bowl by adding the cooked quinoa, then the black beans and avocado. Add salt, pepper, and cilantro. Serve.


Not only are these baked plantain chips perfect for an afternoon snack, they are also ready in only 20 minutes. Can’t beat that!

While the plantain chips are baking, you can mash your avocado and make spicy guac. All you need is avocado, salt, pepper, lime, and red pepper flakes. Simple! I love having friends over and they love having spicy guacamole. I can’t wait to make them these baked plantain chips to go with it!

1 plantain
1/2 tablespoon coconut oil
2 ripe Avocados From Mexico
1 small lime
1/2 tablespoon red pepper flakes
1 tablespoon fresh cilantro
Salt and pepper to taste


  1. Preheat oven at 350 degrees F.
  2. Peel plantain and cut into thin slices. Mix with coconut oil and sea salt. Place on a baking sheet and bake for 20 minutes. (TIP: On the last minute, set the oven to broil to brown and give it an extra crunch! Be careful not to burn them.)
  3. While the plantain chips are baking, make the guacamole. In a bowl, mash the avocado using a whisk (trust me, so much better than a fork!). Add lime, red pepper flakes, cilantro, salt, and pepper. Serve with plantain chips.
