Mojo Chicken Caesar Salad with Plantain Croutons

A simple chicken caesar salad made with mojo chicken breast, twice fried plantains as croutons, and a lightened up creamy caesar dressing!

In case you’re new here (hi!), you should know – I loooove Cuban food. Why? Because I’m Cuban! Well, I wasn’t born there but both of my parents are Cuban. That makes me Cuban, right?

Geez, I said that word 4 times. 

Being Cuban means you grow up eating a LOT of carbs.

It was a hard job but someone had to do it. ;)

There was always tostones as a side dish on the table and sometimes there was mojo chicken too. Actually, my mom would add mojo to EVERYTHING.

Even salmon.

Yikes.

But that’s neither here nor there. The bottom line is Cuban food is my life blood and I’m always trying to figure out ways to incorporate it into my daily life.

Today I turned elements of my Cuban roots into a salad!

Aside from making juicy mojo chicken breast, you make crispy twice fried plantains to use as croutons!

Um YES PLEASE. I’ll take tostones as croutons ANY DAY.

Oh wait and the lightened up Caesar dressing? HELLO. SO GOOD.

I’d been wanting to make a homemade Caesar dressing without funky ingredients (and without anchovies because…anchovies). I found this recipe online and it tastes pretty freaking close to the real thing!

So pumped for you guys to give this mojo chicken caesar salad a try.

Juicy Grilled Mojo Chicken Breast

Chicken breast marinated in mojo (garlic citrus marinade) and spices then grilled under a brick to get those juicy grill marks! 

Years ago, I bought a grill pan. It’s this one, in case you’re wondering. ;)

Since an actual grill is not allowed on my balcony where I live, I was beyond thrilled to use the next best thing – a grill pan! I remember getting home one day, marinating chicken, placing it on the grill pan, anxiously awaiting grill marks.

Except…there were none.

No grill marks.

Ugh.

I saw faded grill marks but I was expecting the ones you see on an actual grill. You know when you BBQ next to the pool and you make chicken and you see grill marks and they taste delicious. Well, there was none of that happening here!

I never used the pan again.

True story.

I was so discouraged after that, I just never used the pan again.

UNTIL NOW.

Crispy Baked Mojo Marinated Chicken Wings

Chicken wings marinated in mojo (garlic citrus marinade) and spices then baked to crispy perfection! Your game day with have a little Cuban kick!

You guys…these crispy baked mojo chicken wings are marinated overnight in a simple, homemade garlic-citrus marinade are OUT OF THIS WORLD.

Granted, anything garlic, citrus, Cuban-style is going to be at the top of my flavor list but trust me when I tell you…this was AMAZING.

If you’re thinking that the only way to get crispy wings is to grill or fry them, I’m here to tell you – you can BAKE them too!

I did the same thing with my Crispy Baked Garlic Parmesan Chicken Wings and Guava BBQ Chicken Wings.

I promise these will blow your mind!

To make this simple homemade mojo marinade, all you need is garlic, onion, orange juice, lime juice, oregano, peppercorns, and salt. Pulse the minced garlic and onion in a food processor until finely chopped. Add two parts orange juice to one part lime. Add oregano, black peppercorns, and salt. Blend until smooth. That’s it! Here are some tips, just in case.

You have to marinate the chicken wings overnight in the fridge if you want the amazing flavor.

The longer you marinate the chicken, the better!

That’s the easy part. Just place them in the bowl with the marinade, and into the fridge they go. Bring them to room temperature the next day, add spices, bake and DONE. Pair these crispy mojo chicken wings with my favorite Cilantro Garlic Sauce and they’ll be even MORE delicious!

You can’t just take my word for it, guys. You gotta make them for yourself and your friends/family.

Chicken wings marinated in mojo (garlic citrus marinade) and spices then baked to crispy perfection! Your game day with have a little Cuban kick!

Servings: 8 servings

Ingredients
  • 2 pounds chicken wings (tips removed; drumettes and flats separated)
  • 1 cup mojo marinade see homemade recipe in notes
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • salt and pepper to taste
Instructions
  1. In a bowl, add chicken wings and mojo marinade and place in the fridge for at least 1 hour (or overnight, the longer the better).
  2. Remove chicken from fridge and bring to room temperature.
  3. Preheat oven to 425 degrees F.
  4. Lay the chicken wings on a lined baking sheet sprayed with cooking spray. Season the chicken wings with garlic, cumin, oregano, salt and pepper.
  5. Bake the chicken wings for 40-45 minutes or chicken wings are cooked through.
  6. Remove from oven. Serve hot with your favorite wing sauce or cilantro garlic sauce.
