Baked Guava Mimosa Glazed Donuts. Turn everyone’s favorite brunch drink into a baked good! Soft, fluffy, baked guava glazed donuts topped with a champagne and guava marmalade glaze!

Yes I’m aware I have a guava addiction! I know I have too many guava recipes.

But, can you blame me though?

Look at these donuts! Are these not the most decadent looking things you’ve ever seen?!

 

Sigh. I’m in love.

Breakfast IS the most important meal of the day AND mimosas are the best drink to have at breakfast sooooo why not make these soft, fluffy, guava-licious, champagne-kissed donuts!

They are basically mimosas except in fruity donut form.

All you need is this donut pan, the ingredients below, and 30 minutes.

You got this!

You get the tart from the guava, the sweetness from the champagne glaze. It really is just the best combo ever.

Turn everyone's favorite brunch drink into a baked good! Soft, fluffy, baked guava glazed donuts topped with a champagne and guava marmalade glaze!

Ingredients
Baked Guava Donuts
  • 1 1/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/3 cup light brown sugar packed
  • 1/2 cup milk room temperature
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • 1/2 cup guava marmalade
Guava Mimosa Glaze
  • 3/4 cup powdered sugar
  • 3 tablespoons champagne
  • 1 tablespoon guava marmalade
Instructions
Baked Guava Donuts
  1. Preheat oven to 350 degrees F. Spray the donut pan with cooking spray. Set aside.

  2. In a bowl, whisk the flour, baking powder, baking soda, salt. Set aside. In another bowl, mix egg, brown sugar, milk, butter, vanilla, and guava marmalade until well combined. Add to the dry ingredients and mix. The batter will be very thick. 

  3. Scoop the batter into a ziplock plastic bag or piping bag, cut a hole in one corner, and pipe the batter into the donut molds, filling about 3/4 full.

  4. Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes before flipping the pans upside down over a rack to remove the donuts.

Guava Mimosa Glaze
  1. In a bowl, whisk powdered sugar, champagne, and guava marmalade together until completely smooth. Dip each cooled donut into the glaze and let the icing set until slightly hardened. Serve and enjoy!

Top Ten Recipes of 2016!

Facebook’s throwback feature reminds me that every year I say the same thing: THIS YEAR FLEW.

Except I really do think 2016 flew. Wasn’t it just January?!

This year was rough for a lot of people I know and for the world in general. I have to say though it was an incredible year for me, personally and career-wise. There were a lot of positive changes made in my life and, I don’t even feel like the same person that started the year. I’ve grown, learned and succeeded. What I had initially planned to do in January has taken a different turn because as we know, God always has other plans. SO MUCH HAS HAPPENED. All good things.

One of them being this blog. I started this blog in February of this year. A lot of people don’t believe me when I say that but I did! Look! This was my first post. Eek, gotta update those photos ASAP.

I initially started an Instagram account, just for fun, posting photos from all the delicious restaurants I’d been to in Miami. For years, I was a Yelp Elite and would experience the BEST of the best here in Miami I also used to dine out A LOT. Things began to shift and evolve slowly into something I’d always wanted which was to work for myself. And what better way to start than to bring all your passions together and start A Sassy Spoon!

In my past life, I would manage blogs and social media accounts for clients in the culinary industry (I still do sometimes). Now I have my own baby that has grown so much in the past year (and still has a lot to go!). This year alone, I’ve developed so many fun recipes, learned how to properly use a DSLR, how to edit photos, a bit of web development, design, networked with other bloggers, and even began monetizing. I also rebranded!

Most importantly, this blog has been on and popping ALL THANKS TO YOU!

A Sassy Spoon would be nothing without your support, your comments and your feedback. I love receiving emails, private messages, tweets, and comments from all of you. It really makes my heart smile! I plan to continue to make things amazing around here in 2017. Stay tuned + bare with me. :)

Cookies and Cream Chocolate Oreo Donuts

Soft, fluffy, baked chocolate donuts with crushed Oreos, topped with a thick cream cheese icing and even MORE crushed Oreos!

You guys, this is just too decadent. Cover your eyes. Look away! I dare you to make these and just have one. It’s impossible!

It’s 1am on a Friday and, my friends and I are leaving the bar. Sounds like the beginning of Piano Man, huh?

In the parking lot, one of my friends says, “Ok, guys, so are we really doing this?”

My friends want to take a quick road trip to our second home – Disney World! We’re annual pass holders and only live 3 hours away. We would literally have to be in the car in a few hours to fully enjoy the day.

“Hey, you guys want an Oreo donut?!”, I changed the subject.

Who brings Oreo donuts on a night out with friends? THIS GIRL.

I grabbed two from the car and hand them out. “Mmm…damn, these are really good.”

“You like the Oreo donuts, really?! They’re not too sweet or too chocolatey?!” They nodded and gave me a thumbs up as they devoured them. As I’m getting dropped off at home, thinking this was one of those things you talk about but never really do, we get a call confirming if this road trip was happening or not.

“No, guys, let’s do it another day…”, I said, being the methodical planner that I am.

“Jamie! It’s my birthday weekend, c’mon! Name 2 things you have to do tomorrow!?”

UGH.

I stuttered and said nothing. I actually had TONS to do the next day but it was a surprise for HIS birthday so I couldn’t say a thing! Do you know how hard it is to keep a secret that big!? We had been planning his Drake themed surprise party for 3 weeks!

All I could say was “Fine. I’ll see you in 3 hours.”

Carpe diem, amirite friends? Or was it peer pressure? Who cares, I was going to Disney World!

The one thing I forgot to give my friends in the parking lot that night, as we planned our spur-of-the-moment rendezvous, was a glass of milk! These Oreo donuts are soft, fluffy, chocolatey, and super sweet. Almost like a cake in donut form! It’s the perfect treat to celebrate an impromptu trip to the Happiest Place on Earth!

In case you’re wondering, we left at 6am, after grabbing a few croquetas at a Cuban bakery, of course. We had an amazing day in Disney! Sometimes you can’t think. You can’t plan. You just have to take the opportunities that are presented to you and go for it!

Soft, fluffy, baked chocolate donuts with crushed Oreos, topped with a thick cream cheese icing and even MORE crushed Oreos!

Ingredients
Chocolate Oreo Donuts
  • 2/3 cup cocoa powder I used Dutch-process
  • 1 3/4 cups all-purpose flour
  • 1 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons white vinegar
  • 1 stick butter melted
  • 8 Oreo cookies crushed
Cream Cheese Icing
  • 2 ounces cream cheese softened
  • 2 cups powdered sugar sifted
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • 8 Oreo cookies crushed
Instructions
Chocolate Oreo Donuts
  1. Preheat the oven to 350 degrees F. Lightly grease two standard donut pans.
  2. In a bowl, whisk together the cocoa powder, flour, sugar, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, whisk together the eggs, milk, vanilla, and vinegar. Add to the dry ingredients with the melted butter and crushed Oreo cookies. Stir until combined.

  4. Scoop the batter into a ziplock plastic bag or piping bag, cut a hole in one corner, and pipe the batter into the donut molds, filling about 3/4 full.

  5. Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes before flipping the pans upside down over a rack to remove the doughnuts.

Cream Cheese Icing
  1. Whisk together the cream cheese, sugar, milk, and vanilla until smooth and combined. The mixture will be very thick.

  2. Dip the tops of the donuts in the icing or use the back of a spoon to spread a thick layer.
  3. Sprinkle with crushed Oreo cookies before letting set for about 20 minutes, or until the icing is slightly hardened.
