Strawberry Salad with Guava Vinaigrette

A simple strawberry salad with mixed greens, juicy strawberries, mandarin oranges, walnuts, feta cheese, and a homemade tangy guava vinaigrette!

Don’t you just love salads with lots of stuff in them!?

I’ve literally gotten BORED while eating salad, asking myself like – is this it? That’s all there is? There’s gotta be more to life than this sad salad.

Ain’t nobody got time for a boring salad!

So when I make salads, I like them LOADED. Case in point: my Jerk Chicken Spinach Salad – I mean I couldn’t add anymore stuff in there because there wasn’t any more room left on the plate!

This strawberry salad is no exception. It’s fruity, fun, colorful, has a good crunch from the walnuts and that guava vinaigrette guys…

Hold on. Let’s talk about that guava vinaigrette for a second. If you’re new here, you should know that I have an obsession with the tropical fruit that is guava. I have over 10 recipes with guava as the main ingredient. I mean honestly it’s a problem. Don’t send help though. I want no solution for this addiction.

One of my favorite salad dressings is raspberry vinaigrette. I’m not big on creamy, heavy salad dressings. I prefer to keep it light. Heck sometimes I’ve done just straight up lemon juice as salad dressing. It all depends on the mood.

So considering raspberry vinaigrette was my fave, I thought – what about guava vinaigrette?

I bet it must taste AMAZING. And that it did, my friends, that it did. It was beyond easy to make, thanks to this helpful tutorial by The Kitchn, and now I get to share it with you!

I mean look at all those delicious COLORS! Who would get bored eating this!?

The recipe for the guava vinaigrette makes 1 cup so ignore this small mason jar in the picture above. This is where I placed the leftover vinaigrette from my previous recipe testing. It’s SO SO good, guys. I can’t stop talking about it.

Did I mention this strawberry salad with guava vinaigrette was colorful? Sigh. It’s so bright and beautiful, I’m sure it will make for an awesome Spring/Summer salad.

You can alter this recipe with your favorite nuts and cheese if you don’t like walnuts or feta. Also, you can add red onions which I didn’t do this time but I’ve done before and it gives a great flavor. Ok enough babbling, go make this beauty!

A simple strawberry salad with mixed greens, juicy strawberries, mandarin oranges, walnuts, feta cheese, and a homemade tangy guava vinaigrette!

Ingredients
  • 2 cups mixed greens
  • 1 cup fresh strawberries , cleaned and sliced
  • 1 cup mandarin oranges
  • 1/2 cup walnuts , pecans, or almonds
  • 1/3 cup feta cheese , crumbled
  • 1/4 red onion , thinly sliced (optional)
Guava Vinaigrette
  • 3/4 cup extra-virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons guava marmalade
  • 2 tablespoons lime juice
  • salt and pepper to taste
Instructions
  1. Combine the olive oil, vinegar, guava marmalade, lime juice, salt and pepper in a mason jar. Shake the jar vigorously for a few seconds until all is well combined.*
  2. In a bowl, add mixed greens, strawberries, oranges, walnuts, feta cheese, and red onion slices (if using). Pour the dressing over salad, and lightly toss. Serve immediately and enjoy!

*Use what you need for your salad, then store the rest in the fridge for up to 2 weeks. The oil and vinegar will separate as it sits, so you'll need to re-shake the vinaigrette every time you use it. Recipe makes 1 cup.
