Spicy BBQ Pulled Pork Lettuce Wraps

Simple lettuce wraps made with slow cooker spicy BBQ pulled pork and spiralized red cabbage. An easy middle-of-the-week dinner using leftovers!

Every Sunday, I aim at prepping my meals for the week. Even if it’s just in parts. For example, cooking rice for the week or roasting veggies. One thing I also like to do is have at least one protein ready – chicken, ground turkey, or pulled pork. Pulled pork is super easy. You literally just set it and forget it on the slow cooker.

These are my three favorite ways to make pulled pork in the slow cooker:

The beauty of this recipe is that you can choose either one of those pulled pork recipes and make these lettuce wraps for the week. You can think of it as a checklist. Making pulled pork on a Sunday = one less meal to worry about during the week!

For this recipe, I made Spicy BBQ Pulled Pork on Sunday. I also spiralized red cabbage and then placed it in a ziplock bag removing all the air from it. This will last in the fridge for about 5 days.

I’m sure you’re tired of hearing me talk about the Inspiralizer but I spiralized this red cabbage and I was totally excited about it! #nerdalert

Of course, you can also thinly slice the red cabbage. Every time I’ve done that however, I’ve made a MESS. That’s why the spiralizer is one of my favorite kitchen tools!

Love the pop of color that this gives the lettuce wraps. Don’t you? It’s a super easy recipe that should definitely be added to your weekly rotation!

Ingredients
  • 1 pound slow cooker spicy BBQ pulled pork cooked (recipe link in notes*)
  • 1 head Boston lettuce Bibb (or iceberg)
  • 1 cup red cabbage spiralized or thinly sliced
  • green onions for garnish (optional)
Instructions
  1. Divide the lettuce leaves among 4 plates and add spicy BBQ pulled pork evenly onto all of the lettuce leaves. Top with red cabbage. Garnish with green onions, if desired. Enjoy!
