Remember the ice cream man?

One of my earliest memories as a child was my cousins and I chasing the ice cream truck down the street. Screaming for him to stop. He would always speed down the block for some reason. Why was he in such a hurry? Once he finally stopped, we’d hand him quarters and devour those deliciously cold ice cream sandwiches or popsicles. Life was good.

To revisit that childhood nostalgia, I made what any person with 6 mangoes and cream cheese at home would make – mango cheesecake popsicles!

Yes, you heard correctly. I’m currently the proud owner of 6 mangoes that my mom brought over from her mango tree. My parents not only have a mango tree in their backyard but an avocado tree too! Perks of living in Florida, I tell you.

With 6 mangoes in my possession, I now have to get creative in the kitchen. First order of business though were these mango cheesecake popsicles! The perfect solution to Miami’s humidity.

Crunchy Maria cookies, cream cheese and sweet mango make these creamy Mango Cheesecake Popsicles the perfect frozen treat for the Summer.
Servings: 10 popsicles
Ingredients
  • 1 mango chopped into cubes
  • 3/4 package cream cheese room temperature
  • 1/2 cup brown sugar
  • 3/4 cup milk
  • 6 Maria cookies crushed by hand
  • Popsicle mold with wooden popsicle sticks
Instructions
  1. In a high speed blender, add mango cubes and blend until puréed. Set aside.
  2. In a mixing bowl, mix the cream cheese until smooth. Add brown sugar and mix until fully incorporated.
  3. Continue mixing and slowly add in the milk and mango mixture until smooth. Add crushed Maria cookies.
  4. Transfer mixture to popsicle molds. Add popsicle sticks and freeze for at least 5 hours before serving.
