I mean… who doesn’t LOVE burgers by the pool!
…especially when they are burgers that are tasty, light, and healthy.
These Black Rice Mushroom Veggie Burgers are made with Village Harvest Organic Antioxidant Blend. This blend is made of a combination of black rice, black lentils and black quinoa making rich in nutrients and antioxidants. All I did was mix the cooked blend with sautéed mushrooms, onions, garlic and seasonings and turned it all into a burger!
Pretty cool, huh?
You can then add any and all the toppings you want! I love me some sliced avocado and tomato on top of my burgers. You can even add sprouts, arugula, lettuce, sliced red onions, sliced carrots, and/or your favorite mayo. Maybe even spicy mayo! YUM! These bad boys are so versatile and completely customizable – my favorite part!

Keep summer vibes healthy with these delicious Black Rice Mushroom Veggie Burgers using gluten-free black rice, mushrooms, and fun toppings!
- 1/2 small onion diced
- 1 clove garlic minced
- 1 cup fresh mushrooms diced
- 3 cups Village Harvest Organic Antioxidant Blend cooked
- 1 egg
- 1 cup gluten-free breadcrumbs*
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- Avocado oil or olive oil for pan frying
- 4 gluten-free hamburger buns**
- Avocado sliced
- Tomato sliced
- Sprouts or arugula
- Your favorite mayo
- In a hot skillet, add about a tablespoon of the oil of your choice. Add onion, garlic, and mushrooms. Sauté over medium-high heat, about 8-10 minutes, or until mushrooms start to brown. Set aside and let cool.
- In a bowl, add cooked black rice, mushroom mixture, egg, breadcrumbs, cumin, oregano, salt and pepper. Mix until all is well combined. Form mixture into patties.
In the same skillet, add 1-2 tablespoons of avocado oil. Pan fry 3 patties at a time on medium-high heat for about 3-4 minutes on each side, until golden brown. Let cool then assemble burgers with your favorite mayo, sliced avocado, tomato, sprouts or aurgula. Serve and enjoy!
